nightcap recipe

Ingredients

Serves 12
oz  ml
Three Spirit Nightcap 16.9 500
Almave Ámbar 12 350
Spiced pear purée* 8 235
Fresh lemon juice 8 235
Non-alc Brut sparkling wine 25.3 750
Block of ice
Lemon and pear wheels to garnish
Cinnamon sticks to garnish

How:

Place the ice block into a punch bowl and add Three Spirit Nightcap, Almave Ámbar, your pear purée and fresh lemon juice.

Give it a stir, and top up with your non-alc sparkling wine. Add slices of lemon and pear and some cinnamon sticks for your garnish.

Keep your sparkling wine on ice near your punch bowl, to allow your guests to top up their cups as they serve themselves - this will help to keep the fizz!

Ladle into punch glasses of your choice, and enjoy!

Note:
This recipe is set out for large batches but can also be made in individual cups if needed. Recipe can also be simplified as required.

*To make pear puree:

2 ripe bosc pears, roughly chopped
12oz pear juice
3/4 cup can sugar
5 cinnamon sticks
5-7 whole cloves
Pinch grated nutmeg
Thumb of ginger root
2 lemon wheels

Bring all ingredients to a boil, reduce heat and simmer until syrup thickens. Strain ingredients for a simple syrup, or remove cinnamon and cloves then puree in food processor until smooth.
